The result is a pleasant, delicate taste. The strongly tannic aroma of the green walnut is softened by the candying. The fresh flavour characteristic of the green fruit remains intact.

Inspired by Italian traditions, adding a little mustard to the candied walnuts makes an excellent mostarda.
