In the Euganean Hills, in Arquà Petrarca – the village where Petrarch chose to spend his final years – one of Venetian cuisine's most precious and little-known treasures grows wild: sparasine, the local wild asparagus.
Thin, intensely flavoured and with a slightly bitter note, these asparagus spears grow freely among the woods and meadows of the park, and their harvest is authorised directly by the Euganean Hills Regional Park Authority, by derogation from the standard regulations – a rare privilege, reserved for those who have known and respected this land for generations.
Hand-picked and preserved in oil using a traditional method, each jar holds the aroma and authentic character of the Euganean Hills.
How to enjoy them: perfect as a starter, excellent as a side dish, and a star ingredient in risottos and traditional Venetian dishes.
Ingredients: Sparasine, sunflower seed oil, wine vinegar, water, salt.
